SPICY PANEER AKURI ON TOAST- AMP UP YOUR CHRISTMAS AND NEW YEARS PARTY PLATTER
Ingredients-
1. 250g soft paneer
2.2tbsp finely chopped onions
3.2tbsp finely chopped tomato
4.2tbsp finely chopped coriander leaves
5.1tsp finely chopped green chili
6.1/2 tsp turmeric
7.2tbsp olive oil
8.2tbsp cream cheese or cheese spread
9.3tbsp milk
10. Salt to taste
11. 2 dozen Melba toast or crostini bread.
Method-
· Heat
oil in a pan and lightly sauté the onions, tomato and chili for a few minutes.
· Reduce
the heat of the pan to a medium flame, crumble in the paneer along with the
turmeric and half the coriander.
· Mix
everything well and austere for a few more minutes until the paneer is cooked
through.
· Take
the pan off the heat and stir in the milk and cream cheese until the mixture
comes to a creamy consistency.
· Season
with salt to taste.
· Lightly
toast or warm the pieces of bread and place generous scoops of the paneer
mixture on top as you would on a crostini. Garnish with the remaining coriander
before serving.
